- Set up your barbecue for roasting.
- Massage the oil and seasoning's (herbs/spices) into the chicken. A spice grinder is the easiest way to grind spices.
- Empty half of the beer from the can, position in the cradle of the poultry roaster and sit the chicken firmly on top.
- Place in the centre of the cooking grate and barbecue over medium heat for about 1¼ to 1½ hours, until the meat thermometer reads 83°C in the thickest part of the thigh. Remember, keep the lid closed as much as possible during barbecuing.
- Carefully remove the poultry roaster from the barbecue, the beer can will be very hot, so use a gloved hand or tongs to help you.
- Set the chicken aside to rest for approximately 10 minutes.
- Carve and serve.
